Tis the season for an abundance of locally and seasonally grown vegetables and fruits. Right about now, zucchini and summer squash are probably coming out of your ears. Your neighbors may have put some on your porch, it may be in a box labeled "FREE" at a small business you frequent or you're purchasing it for quarters at your local Farmer's Market. When it's so accessible and at it's peak, it's easy to take it for granted.
Food waste makes up roughly 170 million metric tons of (negative!) emissions. So rather than letting these foods go to waste and ending up in the landfills, get creative in the kitchen instead.
