⚡️ HOT TIP: Freezing Liquids to Reduce Food Waste and Stock the Freezer
Freezing food and freezing liquids is a way to stock up on food when they’re seasonal & local but enjoy at a later time. You can freeze the food itself or turn it into something else (perhaps a soup, bone broth, casserole, etc.) while it's fresh and then freeze it from there. It helps reduce food waste with big batches & leftovers as well.
When freezing liquids in containers, especially glass, leave about an inch or so of space at the top and leave the lid OFF. Put in the freezer and allow to freeze entirely (usually overnight) and then put the lids on.
As liquids freeze, they expand and shift. Not leaving enough space at the top to shift into and putting the lid on restricts the expansion and causes the liquid to break the container. As you can see in the above photo, the broth expanded upwards but because it had space, it didn't go outwards enough to crack the glass.
Shown here is a homemade bone broth made from veggie scraps I've been accumulating and saving in the freezer. Once I roasted a whole chicken, I used the carcass, the frozen veggie scraps, some garlic, salt, pepper and any other add-ins I had on hand to make broth in the instant pot. I like to let it cool with the lid on after its done cooking (depending on what time you start your broth, this could mean overnight) to 'trap in' the nutrients while it cools. I put it away in the fridge lukewarm & usually strain the ingredients out the next day.
